Meat Roll
- 2 beaten eggs
- 3/4 c. soft bread crumbs
- 1/2 c. tomato juice
- 1/2 tsp. dried oregano, crushed
- 2 Tbsp. snipped parsley
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1 clove minced garlic
- 2 lb. lean ground beef
- 1/2 c. Parmesan cheese
- 1/4 c. dehydrated onion
- 8 thin slices boiled ham
- 6 oz. grated Mozzarella cheese
- 3 diagonal slices Mozzarella cheese (Swiss may be substituted)
- Combine and mix first eight ingredients.
- Add beef and mix well.
- On waxed paper or foil, pat meat mixture to a 12 x 10-inch rectangle.
- Arrange ham atop meat, leaving a small margin around edges.
- Sprinkle shredded cheese over ham.
- Starting from short end, carefully roll up meat, using paper to lift; seal edges and ends.
- Place roll, seam side down, in 13 x 9 x 2-inch baking pan. Bake at 350u0b0 until done, about 1 1/4 hours.
- Center will be pink due to ham.
- Place cheese strips over top of roll; return to oven until cheese melts, about 5 minutes.
- Makes 8 good servings.
