Salsa Corn Chowder
- 1 1/2 cups chopped onions
- 2 tablespoons butter
- 1 tablespoon flour
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 2 cups corn (frozen)
- 2 cups salsa (the hotter the better!)
- 1 (13 1/4 ounce) can chicken or (13 1/4 ounce) can vegetable broth
- 1 (4 ounce) jar chopped pimiento, drained
- 1 (8 ounce) package cream cheese, softened
- 1 cup milk
- Saute onions in butter in large saucepan. Stir in flour, chili.
