Peri Peri Chicken
- 2 -3 lbs chicken
- 4 dried arbol chiles
- 1 dried ancho chile
- 3 tablespoons lemon juice
- 3 tablespoons water
- 1 tablespoon sea salt
- 1/2 tablespoon brown sugar
- 1/2 tablespoon smoked paprika
- 1/2 tablespoon Chinese five spice powder
- 1 teaspoon lemon pepper
- 1/4 teaspoon dried thyme
- 1 1/2 tablespoons olive oil
- 1/8 cup fresh onion, minced
- 1 tablespoon fresh garlic, minced
- 1 tablespoon fresh ginger, minced
- 1 tablespoon tomato paste
- 1 tablespoon peanut butter
- fist full cilantro, chopped
- Simmer the chilies in the lemon & water for 10 minutes.
- Add chilies and all other ingredients (except for the chicken) in a processor and blend until it's paste.
- Coat all chicken pieces with paste, marinate for 15 minutes up to 24 hours.
- Grill with offset heat or bake in the oven at 375 degrees till the color of Coca-Cola! Approximately 1 hour?
