Squash Casserole
- 4 to 6 medium squash
- 1 onion, chopped
- 1 egg, slightly beaten
- 2 Tbsp. butter
- 1 1/2 c. shredded mild Cheddar cheese
- 1/4 c. evaporated milk, undiluted
- 1 large ground sausage
- 1/2 c. grated Parmesan cheese
- salt and pepper to taste
- Cook squash in 2 quarts of water until tender.
- Drain and set aside.
- Brown sausage and drain excess grease and set aside. Slice squash about 1/2-inch thick and place in large bowl.
- Saute onions in butter until tender.
- Place milk, egg, onions and Cheddar cheese in bowl with squash.
- Add salt and pepper.
- Mix well.
- Fold half squash into greased 2-quart casserole dish. Place sausage evenly over squash in casserole dish and spread Parmesan cheese evenly over squash.
- Bake in preheated oven at 375u0b0 for 30 minutes uncovered.
- Dish can be made without sausage, if desired.
