Chocolate Zucchini Cake
- 1/2 c. soft margarine
- 1/2 c. vegetable oil
- 1 3/4 c. sugar
- 3 eggs
- 1/2 tsp. cinnamon
- 1/2 tsp. cloves
- 1 tsp. vanilla
- 1/2 c. sour milk *
- 2 c. zucchini (1/4-inch diced, not shredded)
- 2 1/2 c. unsifted flour
- 4 Tbsp. cocoa
- 1/2 tsp. baking powder
- 1 tsp. baking soda
- 1/4 to 1/2 c. chocolate chips
- Cream margarine, oil and sugar.
- Add eggs, vanilla and sour milk; beat with mixer.
- Mix all dry ingredients together and add to creamed mixture; beat with mixer.
- Stir in diced zucchini. Spoon batter into greased and floured 9 x 13 x 2-inch pan. Sprinkle top with chocolate chips.
- Bake at 325u0b0 for 40 to 45 minutes (or until toothpick comes out clean and dry).
