Our Favorite Mexican Lasagna

  1. Crumble ground beef; add green peppers and microwave 6 minutes. Stir twice.
  2. After meat loses pink color; drain.
  3. Add onion soup mix, chili powder, tomato sauce and paste, olives and water. Microwave 5 minutes, until heated.
  4. Place 2 tortilla shells in a 12 x 7-inch baking dish (microwavable).
  5. Top with 1/2 meat mixture, then 1/2 of both cheeses; repeat.
  6. Microwave for 5 minutes.
  7. Rotate dish.
  8. Microwave 5 more minutes, until cheese has melted.
  9. Top with lettuce and tomatoes.
  10. Serve hot.
