Blueberry Streusel Coffee Cake
- 1/4 cup unsalted butter
- 3/4 cup granulated sugar
- 1 egg
- 2 cups flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/4 teaspoon lemon extract
- 1/4 teaspoon almond extract
- 2 teaspoons poppy seeds
- 1/3 cup milk
- 2 cups fresh blueberries (best with fresh) or 2 cups frozen blueberries (best with fresh)
- Topping
- 1/2 cup packed light brown sugar
- 3 tablespoons flour
- 2 teaspoons cinnamon
- 3 tablespoons butter
- 1/2 cup chopped pecans
- Heat oven to 375u0b0F Grease a 10" springform pan.
- Cream together butter, sugar, and egg.
- Blend in flour, salt, baking powder, extracts, poppy seeds, and milk.
- Fold in blue berries.
- Combine topping ingredients using a fork or pastry cutter. Sprinkle over batter.
- Bake 40-50 minutes or until a toothpick comes out clean.
