Cocoa Apple Cake
- 3 eggs
- 2 c. granulated sugar
- 2 sticks margarine
- 1/2 c. water
- 2 1/2 c. all-purpose flour
- 2 Tbsp. cocoa
- 1 tsp. each: baking soda, cinnamon and allspice
- 1 c. chopped walnuts
- 1/2 c. semi-sweet chocolate bits
- 2 c. grated apple
- 1 Tbsp. vanilla
- 2 c. milk
- 4 egg yolks
- 1/2 c. sugar
- 1 Tbsp. cornstarch
- dash of salt
- 1 Tbsp. unflavored gelatin, dissolved in 1/4 c. cold water
- 4 egg whites, well beaten
- 1/2 c. sugar
- 1 c. chopped Macadamia nuts
- 1 Tbsp. rum flavoring
- 1/2 pt. whipping cream with sugar to taste
- 1 baked pie shell
- Scald milk.
- Beat egg yolks and add milk slowly.
- Add sugar, cornstarch and salt.
- Cook over hot water in a double boiler until mixture coats a spoon.
- Add dissolved gelatin to hot custard mixture.
- Chill until thick.
- Add egg whites, 1/2 cup sugar, Macadamia nuts and rum flavoring and fold into chilled custard mixture.
- Turn into a baked pie shell.
- Chill.
- To serve, top with whipped cream sprinkled with chopped Macadamia nuts.
