Zesty Ham Roll-Ups

  1. In a small bowl, combine cream cheese and mustard.
  2. Add green onions and mix well.
  3. Spread about 1/4 cup cream cheese mixture on each tortilla to within 1/2 inch of edge.
  4. Cover each with 2 to 3 spinach leaves, pressing lightly into cream cheese mixture.
  5. Top with 1 to 2 bell peppers and 2 slices of ham.
  6. Keep layers as flat as possible.
  7. Roll up tightly in jelly roll fashion.
  8. Wrap each securely in parchment paper or plastic wrap.
  9. Refrigerate, seam- side down, at least
  10. 1 hour.
  11. Remove wrapping; discard.
  12. Cut each roll crosswise into 1 - inch slices.
  13. Serve on lettuce lined platter.
