Christmas Cake
- 8 oz. bottle cherries
- 1/2 lb. prunes
- 1/2 lb. raisins
- 1/2 lb. currants
- 1/4 lb. mixed peel
- 1/4 tsp. nutmeg
- 1/4 tsp. cinnamon
- 1/4 tsp. cloves
- 3/4 lb. slightly salted butter
- 1 c. brown sugar
- 2 c. flour
- 1/2 tsp. salt
- 8 eggs
- 2 Tbsp. baking powder
- 2 Tbsp. vanilla extract
- 4 Tbsp. molasses (if dark cake is needed)
- 1 pt. dark rum
- 1 pt. red wine
- Weeks or days before baking:
- Wash and grind or blend all fruits together in blender.
- Place blended fruits in glass bottle or jar with rum and wine; mix well and let stand, covered tightly. Use only enough liquor to cover fruits.
