Broccoli-Cheese Soup
- 2 Tbsp. minced onion
- 1 Tbsp. butter or margarine
- 2/3 c. (about 1/2 jar) homestyle chicken gravy
- 2/3 c. milk
- 1 c. fresh chopped broccoli florets
- pepper to taste
- nutmeg to taste
- 1/2 c. (2 oz.) grated Swiss cheese
- chicken stuffing mix or herb stuffing mix (optional)
- Place onion and butter in 1 1/2-quart microwave-safe casserole.
- Cook at High, uncovered, for 1 minute.
- Stir in gravy, milk, broccoli, pepper and nutmeg.
- Cook, covered, at High for 2 minutes; stir.
- Cover and cook 2 to 3 minutes longer or until broccoli is tender.
- Stir in cheese.
- Cover and cook at Medium (50%) for 1 to 2 minutes or until cheese is melted.
- Stir. Garnish with stuffing mix, if desired.
- Makes 2 servings.
