Peanut Butter Banana Snack Cake
- 1 c. mashed ripe bananas
- 1/2 c. applesauce
- 1/2 c. reduced-fat peanut butter
- 1 c. evaporated skim milk
- 3 Egg Beaters
- 1 yellow cake mix
- 2 Tbsp. flour
- 1 can low-fat vanilla frosting
- 1/2 c. powdered sugar
- 2 Tbsp. skim milk
- 2 Tbsp. peanut butter
- 1/2 tsp. vanilla
- Mix bananas, applesauce and peanut butter.
- Beat well.
- Add milk and Egg Beaters; beat on high.
- Add cake mix and flour.
- Beat on high 2 minutes.
- Pour into 9 x 13-inch pan.
- Bake at 350u0b0 for 45 to 55 minutes.
- Cool.
- Spread frosting on cake.
- Beat together remaining ingredients and drizzle over frosting.
- Store in refrigerator.
