Italian Frittata

  1. Combine first 5 ingredients in bowl and mix well.
  2. Coat a medium nonstick skillet with cooking spray.
  3. Saute red pepper and broccoli for 2 to 3 minutes.
  4. Remove mixture from skillet and set aside.
  5. Add egg mixture to skillet and cook over low heat until set.
  6. Do not stir.
  7. Top with cooked vegetable mixture, alfalfa sprouts and mushrooms.
  8. Sprinkle with shredded cheese.
  9. Cover tightly and let stand off stove for 3 to 5 minutes until cheese melts.
  10. Serves 2.
