Impossible Taco Pie
- 1 lb. ground beef
- 1/2 c. chopped onions
- 1 envelope (1 1/4 oz.) taco seasoning mix
- 3 eggs
- 2 tomatoes, sliced
- 1 (4 oz.) can chopped green chillies
- 1 1/4 c. milk
- 3/4 c. Bisquick mix
- 1 c. shredded Monterey Jack or Cheddar cheese
- Heat oven to 400u0b0.
- Grease pie plate (10 x 1 1/2-inch).
- Cook and stir beef and onions until brown; drain.
- Stir in seasoning mix; spread into plate.
- Top with chillies.
- Beat milk, baking mix and eggs until smooth, 15 seconds, in blender or 1 minute with mixer.
- Pour into plate.
- Bake 25 minutes.
- Top with sliced tomatoes and cheese, then bake until knife inserted in center comes out clean, 8 to 10 minutes or longer.
- Cool 5 minutes. Serve with sour cream, chopped tomatoes, shredded lettuce and Cheddar cheese.
