Easy Chicken Divan
- 2 (10 oz.) pkg. frozen broccoli spears
- 3 whole chicken breasts, cooked and boned
- 1 (10 1/2 oz.) can cream of chicken soup
- 1/2 c. sliced fresh mushrooms or 3/4 small can (optional)
- 3/4 c. mayonnaise
- 1 tsp. lemon juice
- 1/2 can whole milk or to desired consistency
- 2 oz. sharp process American or Monterey Jack cheese, shredded (1/2 c.)
- 1 c. soft bread crumbs
- 1 Tbsp. melted butter
- Cook broccoli slightly; drain.
- Arrange in greased 12 x 7 x 2-inch baking dish.
- Put broccoli on bottom and chicken on top. Combine soup, mayonnaise, lemon juice and milk.
- Stir until smooth and pour over chicken.
- Sprinkle with cheese.
- Top with crumbs combined with butter.
- Bake at 350u0b0 for about 35 minutes.
- Yields 6 to 8 servings.
