Morning Crispies
- 1 pkg. (1/4 oz.) active dry yeast
- 1/2 c. warm water (110~ to 115~)
- 1 c. warm milk (110~ to 115~)
- 2 c. sugar, divided
- 1/2 c. vegetable oil
- 1 1/4 tsp. salt
- 2 eggs
- 1 1/2 tsp. lemon extract
- 5 1/2 to 6 c. all-purpose flour
- 6 Tbsp. butter or margarine, softened and divided
- 1 Tbsp. ground cinnamon
- In a large mixing bowl, dissolve yeast in water; let stand for 5 minutes.
- Add milk, 1/2 cup sugar, oil, salt, eggs, extract and 2 cups flour; beat well.
- Add enough remaining flour to make a soft dough.
- Turn onto a floured board; knead until smooth and elastic, about 6 to 8 minutes.
- Place in a greased bowl, turning once to grease top.
- Cover and let rise in a warm place until doubled, about 1 hour.
- Punch the dough down.
