Southern Cornbread Supreme
- 1 lb ground beef
- 1 medium white onion, peeled and chopped
- 1 cup plain cornmeal
- 1/2 cup all-purpose flour
- 1/2 teaspoon baking soda
- 2 eggs, lightly beaten
- 1 cup buttermilk
- 1/4 cup vegetable oil
- 1 cup cooked black-eyed peas
- 1 cup creamed sweet corn
- 1 cup shredded cheddar cheese
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 pickled jalapeno peppers, chopped
- Preheat oven to 325 degrees.
- Lightly grease an 11 x 7 inch baking dish and set aside.
- In a large skillet over medium heat, brown the beef, stirring until it crumbles and no pink remains.
- With a slotted spoon, remove the ground beef from the pan and set aside to drain on paper towels.
- Add the onions and brown 5 minutes in the pan drippings; drain and set aside.
- In a large mixing bowl, combine the cornmeal, flour, and baking soda.
- Make a well in the center and add the eggs, buttermilk, and oil, stirring just until moistened.
- Add the reserved beef and onions.
- Stir in the peas, corn, cheese, salt, pepper, and jalapenos, mixing well.
- Spread into prepared pan and bake 1 hour.
- Serve hot.
