Southern Cornbread Supreme

  1. Preheat oven to 325 degrees.
  2. Lightly grease an 11 x 7 inch baking dish and set aside.
  3. In a large skillet over medium heat, brown the beef, stirring until it crumbles and no pink remains.
  4. With a slotted spoon, remove the ground beef from the pan and set aside to drain on paper towels.
  5. Add the onions and brown 5 minutes in the pan drippings; drain and set aside.
  6. In a large mixing bowl, combine the cornmeal, flour, and baking soda.
  7. Make a well in the center and add the eggs, buttermilk, and oil, stirring just until moistened.
  8. Add the reserved beef and onions.
  9. Stir in the peas, corn, cheese, salt, pepper, and jalapenos, mixing well.
  10. Spread into prepared pan and bake 1 hour.
  11. Serve hot.
