Zucchini Bread

  1. Heat oven to 325u0b0.
  2. Generously grease bottoms only of 2 baking pans, 9 x 5 x 3-inches. Beat all ingredients on low speed, scraping bowl constantly for 1 minute.
  3. Beat on medium speed for 1 minute.
  4. Pour into pans.
  5. Bake until wooden toothpick inserted into center comes out clean, about 1 hour.
  6. Cool for 10 minutes. Remove from pans. Cool completely before slicing.
  7. Yields 2 loaves.
