Fettucine Alfredo
- 1 qt. water
- 1 1/2 tsp. salt
- 1 Tbsp. oil
- 2 c. uncooked wide egg noodles
- 2 Tbsp. butter
- 1/2 c. whipping cream
- 1/2 c. freshly grated Parmesan cheese
- dash of pepper
- dash of freshly grated nutmeg (if desired)
- Combine water, salt and oil in a medium saucepan.
- Bring to a boil.
- Gradually add noodles, maintaining a boil.
- Reduce heat to slow boil.
- Cook, uncovered, 8 to 10 minutes, stirring once, until tender.
- Drain in a strainer or colander.
- Return noodles to saucepan, or put in a warm chafing dish or electric skillet to finish at table.
- Fold and stir until melted.
- Pour in whipping cream.
- Sprinkle with Parmesan cheese.
- Fold and stir until cream is partially absorbed and cheese is melted.
- Just before serving, add pepper and nutmeg, if desired.
- Makes two servings.
