Spinach Lasagna(Heart Healthy)
- 1 bunch fresh spinach, finely chopped or 1 (10 oz.) pkg. frozen chopped spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 1/2 c. chicken or vegetable stock
- 3 c. tomato sauce
- 1 Tbsp. chopped basil or 1/2 tsp. dried basil
- pepper
- 1 1/2 c. dry cottage cheese
- 1/2 c. plain low-fat or nonfat yogurt
- 8 oz. lasagna noodles
- 6 oz. part-skim Mozzarella cheese
- Wash, dry and chop fresh spinach or squeeze thawed spinach dry. Saute onion and garlic in stock. Add tomato sauce and seasonings. Simmer 20 to 30 minutes. Mix cottage cheese and yogurt. Cook lasagna noodles according to package directions; drain well. Spread part of sauce in a shallow 9-inch baking pan. Add layers of noodles, spinach, cottage cheese mixture and Mozzarella. Repeat layers ending with Mozzarella. Bake in 350u0b0 oven 40 to 50 minutes. Makes about 6 servings.
