Pita Bread

  1. Combine
  2. in
  3. bowl
  4. warm
  5. water,
  6. yeast and sugar.
  7. Stir until yeast
  8. is
  9. thoroughly dissolved.
  10. Let stand until yeast begins to "work".
  11. Sift
  12. into a large bowl the flour, oil and salt.
  13. Beat in 2 cups of warm water using wooden spoon.
  14. When blended, beat in yeast mixture until completely blended.
  15. Turn onto floured board. Knead about 10 to 12 minutes until smooth and not
  16. sticky.
  17. Grease large
  18. bowl.
  19. Put in dough.
  20. Turn to coat.
  21. Cover with damp cloth.
  22. Let rise until double, 1 1/2 to 2 hours.
  23. Punch
  24. down. Knead
  25. for
  26. 2 to 3 minutes.
  27. Roll into thick sausage,
  28. 15 to 16-inches long.
  29. Cut into 15 to 16 equal pieces.
  30. Pat
  31. each
  32. into ball.
  33. Roll
  34. on
  35. floured
  36. board into circles 3/16-inch thick.
  37. Be exact.
  38. Let stand at room temperature for
  39. 1
  40. hour.
  41. Place on wire rack in a 500u0b0 oven about 5 minutes.
  42. (Bread
  43. will
  44. start
  45. to rise and brown.) Remove from oven.
  46. Cool on wire rack.
