Veggie Bites

  1. Heat the oven to 450u0b0.
  2. Brush bottom of rectangular pan, 13 x 9 x 2-inches with about 1 tablespoon of the melted margarine.
  3. Beat egg and water with a fork in a shallow dish.
  4. Mix flour and salt in another shallow dish.
  5. Dip about 1/4 of the vegetables into egg mixture.
  6. Remove 1 vegetable piece at a time with a slotted spoon, fork or hands; roll in flour mixture to coat.
  7. Place in pan. Repeat with remaining vegetables.
  8. Pour remaining margarine carefully over each vegetable piece.
  9. Bake, uncovered, turning once, until crisp-tender and golden brown, 10 to 12 minutes. Sprinkle Parmesan cheese.
