Tunisian Fricassee Sandwich
- pumpkin sauce
- 500 g pumpkin
- 4 garlic cloves, mashed
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon paprika
- 1/4 cup oil
- 1 teaspoon caraway seed, ground
- 1 lemon
- buns
- 4 cups flour
- 2 teaspoons yeast
- 2 tablespoons oil
- 1 teaspoon salt
- 1 egg (optional)
- 1 1/4 cups water, someone said you needed more
- filling
- 3 potatoes, boiled cubed
- 4 eggs, hardboiled, sliced
- 4 pickles, sliced lenghwise
- 100 g olives, pitted
- 100 g canned tuna, drained
- pumpkin
- cook pumpkin and garlic,mash together add rest of ingredients.
- buns mix all ingredients start with one cup water and add more if needed.
- knead dough until it stretches between two fingers and doesnt break form 20 balls roll out into cigar shape like 6" sub bun.
- let rise
- until doubled
- fry in fat that comes up to middle of bun
- let cool a little.
- slice length wise.
- put pumpkin on one side.
- eggs on other side.
- fill with tuna that has potatoes with it in the middle.
- mix in lemon juice.
- top with pickle and green and black olives.
