Edna'S No Mistake Yellow Squash Casserole

  1. In saucepan, cook squash, onion and green and red sweet peppers in melted margarine over medium heat for 7 to 9 minutes or until vegetables are slightly softened.
  2. Thoroughly mix mayonnaise, cheese, egg, sugar and seasonings into vegetables. Spoon into a 2 1/2 quart baking dish that has been sprayed with nonstick coating.
  3. Sprinkle with cracker crumbs.
  4. Bake at 350u0b0 for about 30 minutes or until bubbly and browned.
  5. Makes 8 servings.
