Edna'S No Mistake Yellow Squash Casserole
- 5 c. sliced yellow squash (2 to 3)
- 1/2 c. chopped onion
- 1/2 c. chopped green pepper
- 1/2 c. chopped sweet red pepper
- 2 Tbsp. margarine
- 3/4 c. mayonnaise
- 1/2 c. grated medium Cheddar cheese
- 1 egg, beaten
- 1 Tbsp. sugar
- 3/4 tsp. garlic powder
- 1/2 tsp. salt
- 1 1/2 tsp. Worcestershire sauce
- 1/4 tsp. ground red pepper (optional)
- 1/2 c. crushed cracker crumbs
- In saucepan, cook squash, onion and green and red sweet peppers in melted margarine over medium heat for 7 to 9 minutes or until vegetables are slightly softened.
- Thoroughly mix mayonnaise, cheese, egg, sugar and seasonings into vegetables. Spoon into a 2 1/2 quart baking dish that has been sprayed with nonstick coating.
- Sprinkle with cracker crumbs.
- Bake at 350u0b0 for about 30 minutes or until bubbly and browned.
- Makes 8 servings.
