Amish Dressing
- 1 1/2 qt. chicken broth with meat pieces (bouillon cubes can be added)
- 1 c. potatoes, diced fine
- 1 c. celery, cut fine
- 1 c. carrots, diced fine
- 1 small onion, cut up
- 4 to 6 eggs, beaten
- salt and pepper to taste
- 1 stick butter
- 1 1/2 loaves bread
- Prepare bread by
- cutting
- in small pieces and toasting in oven. Melt butter in skillet
- and
- put crumbs in to toast a little, this adds good flavor.
- In
- a
- larger
- bowl,
- put
- chicken pieces, broth, cooked vegetables (potatoes, celery
- and
- carrots, cut
- the size of peas, and cooked in salt
- water),
- salt, pepper, onions and beaten eggs.
- (If not enough broth to soak up bread, add some milk.) Pour over toasted bread. Grease roaster.
- Put dressing in and bake covered at 350u0b0 approximately 1 hour.
- Serves 12 to 15.
- If stuffing bird, omit broth, eggs and milk.
