Deviled Eggs
- 3 qt. cold water
- 1 doz. egg
- 1 1/2 c. mayonnaise
- 1 Tbsp. dry mustard
- 1/2 lb. bacon
- 1/2 tsp. black pepper
- 1/4 tsp. salt
- paprika
- In large pot, add water and gently add eggs.
- Bring water to hard rapid boil.
- Reduce to simmer for 10 minutes.
- Put pot into sink and fill with cold water.
- Let sit for 20 minutes. Meanwhile, cut bacon into 1/2-inch pieces and fry until crisp. Drain and set aside.
- In a small bowl, mix mayonnaise, mustard, salt and pepper; set aside.
- Peel eggs; cut in half lengthwise, separating the whites and yolks.
- Rinse out whites.
- Mash yolks into fine substance.
- Add bacon and mix well.
- Add to mayonnaise mixture and mix well.
- Add more mayonnaise if desired.
- Fill egg whites with mixture.
- Sprinkle with paprika and serve.
- Best served cold.
