Jambalaya
- 1/2 lb. spicy smoked sausage
- 2 Tbsp. margarine
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 green pepper, chopped
- 1 red pepper, chopped
- 16 oz. can tomatoes, chopped
- 1/2 tsp. thyme
- 1 tsp. chili powder
- 1/4 tsp. hot red pepper
- 1/8 tsp. sugar
- 1 c. long grain white rice
- 6 oz. smoked ham, diced
- 1 1/2 c. chicken broth
- 1 lb. cooked chicken, diced
- 1 Tbsp. parsley
- Saute
- sausages
- in greased Dutch oven over medium heat until well
- browned.
- Transfer
- to
- plate.
- Discard drippings from pot. Add
- margarine; heat.
- Add onion. Cook over medium-low heat
- 2 minutes.
- Add
- garlic. Cook 3 minutes.
- Add green and
- red pepper,
- tomatoes
- (drained),
- thyme,
- chili powder, ground red pepper and sugar. Cook, covered, over low heat for 15 minutes.
