Mushroom-Chicken Dijon
- 3 c. noodles, precooked
- 4 chicken breast halves
- 1 1/2 c. broccoli flowerets
- 1 1/2 c. sliced mushrooms (fresh or canned)
- 1/4 c. milk
- 1 can cream of chicken and broccoli soup
- 2 Tbsp. Dijon mustard
- 1/8 tsp. garlic (to taste)
- 3 Tbsp. cooking oil
- dash of soy sauce (to taste, optional)
- In skillet, cook chicken in oil about 10 minutes, until brown on both sides.
- Remove chicken.
- Add a touch more oil, if necessary.
- Cook broccoli and mushrooms until tender (if using canned mushrooms, cook them less than broccoli).
- Stir in soup, milk, mustard and spices.
- Heat to boiling.
- Return chicken to skillet.
- Cover and simmer about 10 more minutes or until chicken is done.
- Serve contents of skillet over precooked noodles.
