Fish With Lemon Spinach
- 2 small onion, cut 1/4-inch slices
- 2 Tbsp. margarine or butter
- 2 Tbsp. flour
- 1 c. milk
- 1 tsp. instant chicken bouillon
- 1 (16 oz.) pkg. frozen fish fillet, thawed and separated
- 1/2 tsp. salt
- 2 (10 oz.) pkg. frozen chopped spinach, thawed and drained
- 3 Tbsp. lemon juice
- 2 Tbsp. grated Parmesan cheese
- Cook and stir onions and margarine until tender.
- Stir in flour.
- Cook over low heat, stirring constantly until mixture is smooth and bubbly; remove from heat.
- Stir in milk and instant bouillon.
- Heat to boiling, stirring constantly.
- Boil and stir 1 minute.
- Arrange fillets in an oblong baking dish.
- Sprinkle with salt.
- Spoon spinach around fish; drizzle lemon juice over spinach.
- Spoon sauce evenly onto fish and spinach.
- Cook uncovered in a 350u0b0 oven until fish flakes with fork, about 20 to 25 minutes.
- Sprinkle with cheese and paprika.
- Makes 8 servings.
