Honey Mustard Lobster With Asparagus
- 4 (8 oz.) fresh or frozen lobster tails, thawed
- 1 lb. fresh asparagus
- 2 Tbsp. margarine
- 1 1/2 Tbsp. flour
- 2/3 c. low-fat milk
- 1 1/2 Tbsp. Dijon mustard
- 2 tsp. honey
- 2 Tbsp. minced fresh chives
- Cook lobster in boiling water 8 minutes.
- Rinse with cold water.
- Split and clean tails.
- Cut into 3/8 inch slices; set aside.
- Snap off tough ends of asparagus.
- Steam over boiling water 8 minutes; set aside.
- Melt margarine in small saucepan over low heat.
- Add flour; stir until smooth.
- Cook 1 minute, stirring constantly.
- Gradually add milk, mustard and honey.
- Cook over medium heat, stirring constantly until thickened and bubbly.
- Stir in chives.
- Arrange spears and lobster slices on individual plates.
- Spoon mustard sauce over and serve.
