Artichoke Nibbles
- 2 (6 oz.) jars marinated artichokes
- 1 finely chopped onion
- 1 clove garlic, minced
- 2 Tbsp. butter
- 4 eggs
- 1/4 c. fine Ritz cracker crumbs
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. oregano
- 1/8 tsp. Tabasco sauce
- 1/2 lb. shredded sharp Cheddar cheese
- 1 Tbsp. dried parsley
- Drain and chop artichokes.
- Saute onion and garlic in butter until tender.
- Cool.
- Beat eggs and stir in cracker crumbs, salt, pepper, oregano, Tabasco, cheese and parsley.
- Add chopped artichokes, blending well.
- Then add onion mixture, mixing thoroughly.
- Spread in a greased 8 x 10-inch pan.
- Bake at 350u0b0 for 30 minutes.
- Cut into 1-inch squares.
- May be frozen, thawed and reheated for 12 minutes at 350u0b0.
