Rowena'S Curry Chicken
- 1 (3 1/2 lb.) broiler-fryer, cut up
- flour for coating
- 1/4 c. salad oil
- 2 garlic cloves
- 2 medium onions, thinly sliced
- 1/3 c. blanched almonds
- cooked rice or noodles
- 1 medium green pepper, chopped
- 2 tsp. salt
- 1 Tbsp. curry powder
- 1 (29 oz.) can tomatoes
- 1/2 c. dark seedless raisins
- 2 tsp. butter
- 1 Tbsp. chopped parsley
- 1/2 c. chopped celery
- Coat chicken and brown in oil; remove.
- In drippings over medium heat, cook garlic, onions, green pepper, celery, curry and salt for 5 minutes.
- Stir in tomatoes and raisins.
- Add chicken. Cover and simmer until chicken is done, about 45 minutes.
- Brown almonds in butter, shaking skillet occasionally.
- Sprinkle almonds and parsley over chicken.
- Serve with hot rice or noodles.
