Zippy Chili
- 1 lb lean ground beef
- 1/2 cup onion, chopped
- 1 cup fresh mushrooms, chopped
- 1/2 cup green pepper, chopped
- 1/2 cup red pepper, chopped
- 1 garlic clove, minced
- 2 cups water
- 1 (14 1/2 ounce) can diced tomatoes with green chilies, undrained
- 1 (1 1/4 ounce) package taco seasoning
- 1 (15 1/2 ounce) can great northern beans, rinsed and drained
- 1 (15 ounce) can black beans, rinsed and drained
- 1 (15 ounce) can pinto beans, rinsed and drained
- 8 tablespoons cheddar cheese, shredded
- In a large saucepan, cook beef and onion over medium heat until no longer pink.
- Add mushrooms, peppers and garlic, cook and stir 3 minutes, until vegetables are almost tender.
- Stir in water, tomatoes and taco seasoning.
- Bring to a boil, reduce heat and simmer, uncovered, 30 minutes.
- Add beans, simmer 30 minutes longer.
- Top with cheese to serve.
