Island Pork Chops
- 4 pork chops (1 inch thick)
- 2 Tbsp. vegetable oil
- 1/4 c. butter or margarine
- 1/2 c. green onion, chopped
- 2 cloves garlic, minced
- 2 Tbsp. all-purpose flour
- 1 Tbsp. curry powder
- 1 c. chicken broth
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 (8 3/4 oz.) can crushed pineapple, undrained
- 1 heaping c. snow peas
- Heat oil in a large skillet.
- Brown pork chops on both sides. Remove from pan and keep warm.
- Melt butter in same skillet.
- Add green onion and garlic.
- Saute until soft.
- Stir in flour, curry powder, chicken broth, salt, pepper and pineapple with juice. Bring mixture to a boil.
- Return pork chops to pan.
- Cover. Simmer for 15 minutes.
- Add snow peas.
- Cook for a few minutes until tender.
