Garden Salad With Green Goddess Dressing(Lo-Fat)
- 2 c. low-fat cottage cheese
- 1/2 c. nonfat mayonnaise
- 2 Tbsp. freshly squeezed lemon juice
- 2 Tbsp. grated Parmesan cheese
- 1 Tbsp. minced shallots or scallions
- 1 Tbsp. fresh parsley
- 1 tsp. Dijon mustard
- 1/2 tsp. dried tarragon
- 1/2 tsp. freshly ground pepper
- 1 clove garlic, minced
- 6 c. mixed salad greens, torn into bite size
- 2 c. thinly sliced carrots
- 2 c. bite size broccoli florets
- 1 pt. cherry tomatoes, halved
- 1 c. sliced mushrooms
- In a food processor, puree the cottage cheese 3 minutes or until very smooth. Transfer to a large bowl. Whisk in mayonnaise, lemon juice, Parmesan, shallots or scallions, parsley, mustard, tarragon, pepper and garlic. Cover and refrigerate until needed.
