Chewy Chocolate Cookies
- 2 c. sugar
- 1/2 c. margarine, melted
- 4 (1 oz.) sq. melted unsweetened chocolate
- 4 eggs
- 2 tsp. vanilla
- 2 c. flour
- 2 tsp. baking powder
- 3/4 tsp. salt
- 3/4 c. confectioners sugar
- 6 cooking apples (golden Delicious are a good choice)
- 8 Tbsp. (1 stick) sweet butter
- 1/2 c. firmly packed brown sugar
- 2/3 c. Calvados
- Core the apples and peel them if you like.
- (We prefer the added texture of the peels, but peeled apples look more sophisticated.)
- Cut the apples crosswise into 1/4-inch thick slices.
- Melt about 2 tablespoons of the butter in a skillet and add a single layer of apple slices.
- Raise the heat and saute the slices, turning occasionally, until browned, about 5 minutes. With a slotted spoon, transfer apples to a bowl.
- Repeat with more butter and another batch of apples until all have been cooked.
