Tofu-Based Sauces
- 1 (10 1/2 ounce) box silken tofu
- For mayonnaise
- 1 garlic clove, minced
- 2 -3 teaspoons cider vinegar
- 1/2 teaspoon salt
- For Aioli
- 2 -3 garlic cloves, minced
- 1/2 teaspoon salt
- 1/2 teaspoon dry mustard
- 1/2 teaspoon cider vinegar
- 1/4 cup freshly minced chives (optional) or 1/4 cup freshly minced parsley (optional)
- Greek Lemon sauce
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 3 -5 dashes white pepper
- Horseradish sauce
- 2 teaspoons fresh lemon juice
- 1/2 teaspoon salt
- 2 teaspoons prepared horseradish
- white pepper, to taste
- minced chives (optional)
- Place all ingredients in a blender, and whip until smooth.
- Store in a tightly covered container in the fridge.
