Jule Kage(Norwegian Christmas Bread)
- 1 c. warm water
- 2 c. milk (I use powdered milk)
- 1/2 c. shortening (I use corn oil margarine)
- 4 beaten eggs
- 4 tsp. ground cardamon
- 1 c. golden raisins
- 1 c. dark raisins
- 1 1/2 c. sugar
- 2 tsp. salt
- 2 pkg. active dry yeast
- about 10 c. flour
- 1 lb. pkg. candied fruit mix
- 1/2 c. each: red and green cherries or currants
- walnuts and red and green candied cherries (add if frosting)
- Mix yeast with lukewarm water in large mixing bowl.
- (I use large Tupperware "cake taker" with lid to keep the dough warm.) Add milk, eggs and some flour and beat well.
- Then add rest of ingredients and as much flour as needed to make soft, easy to handle dough.
- Knead well and let rise until double, then knead again and let rise.
- Put in 1 pound loaves or whatever you like (round cake pans, etc.) and rise until double.
- Bake in a 300u0b0 oven for 45 minutes (watch).
- Frost and decorate as desired.
