Divinity Candy

  1. Combine
  2. sugar,
  3. syrup, water and pinch of salt in pan. Bring to a rapid boil, cooking until this forms a soft ball in water. Beat
  4. egg whites, pinch of salt and cream of tartar in large mixing bowl while liquid is cooking.
  5. Remove liquid from stove and
  6. pour
  7. half over stiffly beaten egg whites.
  8. Return remaining half
  9. of liquid to stove and boil until a hard ball forms in water.
  10. Liquid will be thick and look almost white at last
  11. stage. Beat
  12. first
  13. mixture while last half is cooking, then
  14. pour remaining into mixture beating slowly until mixture loses
  15. its gloss
  16. and
  17. is stiff enough to drop by spoon.
  18. Add nuts
  19. and vanilla just before dropping onto waxed paper.
  20. When cool, store in airtight container.
