Easter Egg Bake
- 1 lb. bulk pork sausage, crumbled
- 1 Tbsp. butter
- 8 mushrooms, sliced
- 12 eggs, beaten
- 1 c. milk
- 8 oz. Mozzarella cheese, shredded
- 2 medium tomatoes, peeled and chopped
- 1/2 tsp. salt
- 1/2 tsp. freshly ground pepper
- 1/3 tsp. dried oregano leaves, crumbled
- 1 medium red onion, chopped
- Preheat oven to 400u0b0.
- Generously grease large ovenproof skillet or large shallow baking dish; set aside.
- Fry sausage in a skillet over medium-high heat, stirring constantly, until sausage is no longer pink.
- Drain and transfer to bowl.
- Wipe out skillet. Add butter and melt over medium heat.
- Saute mushrooms and onions until soft but not brown.
- Remove from heat and stir in sausage. Blend remaining ingredients and turn into the prepared dish.
- Bake until knife inserted in center comes out clean, about 30 to 35 minutes.
- Serves 8 to 10 people.
- Makes an excellent main dish for a special breakfast or brunch.
