Cherry Confetti Cake
- 3 c. flour
- 2 tsp. baking powder
- 1 tsp. salt
- 1 c. shortening (1/2 butter can be used)
- 4 c. confectioners sugar
- 1 tsp. almond extract
- 4 eggs, added one at a time
- 1 c. milk
- 1/2 c. walnuts, chopped
- 1 c. maraschino cherries, drained and finely cut
- Sift or mix together the flour, baking powder and salt.
- Cream the shortening and confectioners sugar.
- Blend in the almond extract and eggs.
- Measure milk and add alternately with dry ingredients to creamed mixture.
- (Begin and end with dry.)
- Fold in walnuts and cherries.
- Pour into well-greased and floured 10-inch tube pan.
- Cut gently through batter to break air bubbles. Bake at 350u0b0 for 60 to 65 minutes.
- Remove from oven and while still warm spread on top with butter and sprinkle with a mixture of cinnamon and sugar.
