Mexican Layer Casserole
- 1 lb. ground beef
- 1 (16 oz.) can refried beans
- 1 (11 1/2 oz.) pkg. enchilada sauce mix
- 7 c. tortilla chips (8 oz.)
- 1/4 c. sliced black olives
- 1 medium tomato, chopped
- 1 medium onion, chopped
- 1 (8 oz.) can tomato sauce
- 1/2 c. water
- 1 c. (4 oz.) shredded Cheddar cheese
- 2 c. shredded lettuce
- Crumble ground beef into 2-quart glass bowl.
- Add onion. Microwave (High), uncovered, 5 to 6 minutes or until meat is set; stir once.
- Stir to break meat into small pieces; drain.
- Stir in beans, tomato sauce, sauce mix and water.
- Microwave (High), uncovered, 6 to 7 minutes or until hot and bubbly.
- Stir once. Place chips in 12 x 8-inch glass baking dish; crush slightly. Spoon hot meat mixture evenly onto chips.
- Sprinkle with cheese and olives.
- Microwave (High), uncovered, 2 to 2 1/2 minutes or until cheese is melted.
- Garnish with lettuce and tomato.
- Serves 6 to 8.
