Baking Powder Biscuits
- 2 1/4 c. all-purpose flour (reserve 2 tsp.)
- 1 Tbsp. granulated sugar
- 2 tsp. double-acting baking powder
- 1/2 tsp. salt
- 1/2 tsp. cream of tartar
- 1/2 c. reduced-calorie tub margarine
- 3/4 c. well chilled, low-fat (1.5%) buttermilk
- Preheat oven to 425u0b0.
- Spray nonstick baking sheet with nonstick cooking spray; set aside.
- In medium bowl, combine flour, sugar, baking powder, salt and cream of tartar.
- Using pastry blender or 2 knives, cut in margarine until mixture resembles coarse crumbs.
- Using fork, stir in buttermilk until just combined.
- Sprinkle reserved 2 teaspoons flour on work surface; roll out dough to 1/2-inch thickness.
- Using 3-inch round biscuit cutter, cut out 12 biscuits, gathering up scraps and re-rolling dough as necessary.
- Place biscuits on prepared baking sheet; bake until golden brown, 15 to 20 minutes.
- Makes 12 servings.
