Apple Cake

  1. In a mixing bowl combine flour, baking powder, 2 cups sugar, oil, eggs, orange juice, salt and vanilla.
  2. Beat until thoroughly combined.
  3. In another bowl, toss apples with cinnamon and remaining sugar.
  4. Spread 1/3 of batter in a greased 10-inch tube pan.
  5. Cover with half the apples.
  6. Repeat layers.
  7. Spoon remaining batter over top.
  8. Bake at 350u0b0 for 1 hour and 30 minutes or until cake tests done.
  9. Cool in pan for 20 minutes before removing to a wire rack to cool completely.
  10. Just before serving, dust with confectioners sugar, if desired.
  11. Yields 12 to 16 servings.
