Shrimp And Asparagus Casserole
- 1 c. rice, cooked
- 1 lb. fresh asparagus, cut up and cooked or 1 pkg. frozen cut up asparagus, cooked
- 3 (4 oz.) cans shrimp
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1 1/4 c. milk
- 1/2 lb. sharp Cheddar cheese, grated
- salt and pepper
- Heat oven to 350u0b0.
- Spread cooked rice in buttered baking dish, 11 1/2 x 7 1/2 x 1 1/2-inches.
- Spread asparagus over rice. Cover with shrimp.
- Melt butter; stir in flour and cook over low heat, stirring until mixture is smooth and bubbly.
- Remove from heat.
- Stir in milk and cheese.
- Bring to boil; boil 1 minute, stirring constantly.
- Season to taste with salt and paprika.
- Pour sauce over shrimp in baking dish.
- Sprinkle with paprika.
- Bake 20 minutes.
- Makes 6 to 8 servings.
