Chicken-Mayo Parmesan Pizza
- 1 (12 inch) prepared pizza crust
- 1 tablespoon oil
- kosher salt (optional)
- 1/2 cup mayonnaise
- 2 tablespoons sour cream
- 1 (12 inch) prepared pizza crust
- 2 cups chopped cooked chicken
- 1 large firm plum tomato, chopped
- 1/2 cup grated parmesan cheese
- 1 (4 1/2 ounce) can green chilies (drained and chopped)
- 3 -4 green onions, finely chopped
- 1 teaspoon minced fresh garlic
- black pepper
- 2 cups shredded monterey jack cheese or 2 cups mozzarella cheese, divided
- Set oven to 450 degrees.
- Place the prepared pizza on a pizza pan.
- Brush the crust with oil, then sprinkle lightly with kosher salt (if using).
- Prick holes in the crust with a fork to prevent riing while baking.
- Bake for 8-10 minutes (if the crust rises while baking just push down withm a fork).
- In a large bowl mix all ingredients (use only 1 cup cheese).
- Spread the mixture onto the pre-baked crust.
- Sprinkle the remaining 1 cup (or more) shredded mozzeralla cheese.
- Bake for about 15-17 minutes or until heated through and the cheese is melted.
