Turkey Tetrazzini
- 1 (15 oz.) box macaroni with cheese packet
- 1 Tbsp. oil
- 1 c. coarsely chopped onion
- 1/2 c. chopped bell pepper
- 2 cloves garlic, minced
- 8 oz. fresh mushrooms, sliced
- 12 oz. cooked turkey breast, cubed
- 1 1/2 c. skim milk
- 12 oz. pkg. Mozzarella shredded cheese
- Preheat oven to 350u0b0.
- Cook macaroni according to package directions.
- Heat oil in skillet.
- Saute onion, pepper and garlic over medium heat 2 to 3 minutes.
- Add mushrooms and cook 2 more minutes.
- Spray a 3-quart casserole with vegetable oil spray; drain macaroni and combine with cheese packet, sauteed vegetables, turkey and milk.
- Pour into casserole dish; cover and cook 30 to 45 minutes.
- Remove from oven and sprinkle with Cheddar cheese.
- Cover until cheese melts.
