Yule Cake(Fruit Cake)
- 1 1/2 c. English walnuts, halves
- 1 1/2 c. pecans, halves
- 1 (8 oz.) pkg. dates, chopped
- 1 sm. jar red cherries, with juice
- 1 sm. jar green cherries, with juice
- 1/2 c. raisins, seedless
- 3/4 c. all-purpose flour
- 3/4 c. sugar
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 3 eggs, beaten
- 1 tsp. vanilla
- Grease bottom and sides of a loaf pan.
- (Pam can be used.) Put nuts, dates, cherries, with juice, and raisins in bowl.
- Stir in sugar.
- Combine all dry ingredients.
- Set aside.
- Beat eggs and add vanilla.
- Combine with nut mix and add flour mix.
- Mixture will be thick.
- Stir well and spoon into loaf pan.
- Bake in slow oven at 300u0b0 for 1 hour and 15 minutes.
- Cool for 10 minutes. Then remove from pan.
- Keeps well in refrigerator.
