Green Beans With Cashews

  1. Trim ends off beans.
  2. Bring a large pot of salted water to a boil.
  3. Add beans.
  4. Bring water back to a boil and slowly boil the beans, uncovered, for 8 to 12 minutes or until tender but still crunchy and firm.
  5. Immediately pour into colander and run under cold water for 3 to 4 minutes.
  6. Remove to paper towels and dry. (May be refrigerated covered overnight.)
  7. Before serving, bring to room temperature.
  8. Melt butter or margarine in a large skillet or wok.
  9. Add beans, lemon juice and cashews.
  10. Cook over moderately high heat, stirring and tossing gently until heated through. Season to taste with salt and pepper.
  11. Serves 10.
