Joyce'S Fabulous Fruit Cocktail Cake
- 1 1/2 cups sugar
- 1/4 cup oil
- 2 eggs
- 1 teaspoon vanilla
- 2 cups flour
- 1/4 teaspoon salt
- 2 teaspoons baking soda
- 1 (16 ounce) can fruit cocktail
- 1/2 cup coconut
- 1/2 cup margarine or 1/2 cup butter
- 3/4 cup sugar
- 1/2 cup milk
- 1/2 cup coconut
- 1/2 cup chopped walnuts
- 1 teaspoon vanilla
- Beat together sugar, oil, eggs, and vanilla.
- Sift together flour, salt, and baking soda.
- Add fruit cocktail, mix well.
- Pour in 9x13 inch pan.
- Sprinkle coconut over batter.
- Bake at 350 degrees for 45 minutes.
- Just before removing cake from oven, bring margarine, sugar, and milk to boil in small saucepan for one minute.
- Remove from heat.
- Add coconut, chopped nuts, and vanilla.
- Spread at once over hot cake.
